Vegetarian Stuffed Mushrooms

This appetizer or side combines our crumbled Dominex Eggplant Meatballs with portabella mushrooms and sharp cheddar cheese for a recipe that pleases any palate.



INGREDIENTS

12 Dominex Eggplant Meatballs

1 Package Portabello Mushrooms

4 oz. Cheddar Cheese

2 tbsp Olive Oil

1 tsp Dried Basil

1 tsp Dried Oregano


DIRECTIONS

Cook Eggplant Meatballs in a skillet. Crumble meatballs. Set aside. Wash mushrooms and pop the stem off. Brush mushrooms with olive oil. Bake at 400 degrees for 6 minutes. Stuffed crumbled eggplant meatballs in mushroom tops. Top with cheese. Bake for another 5 minutes. Top with Basil and Oregano. Garnish with avocados.
