Eggplant Fry Salad

This refreshing salad combines the taste of arugula, feta and our delicious Dominex Italian-breaded Eggplant Fries. Make this your main meal or a companion salad.
14 oz. box of Dominex Eggplant Fries
3 tablespoons of white balsamic glaze 7 oz. jar of sun-dried tomatoes (in oil) diced 1/2 teaspoons kosher salt 1 package of arugula leaves 1/2 cup crumbled feta or blue cheese
DIRECTIONS Preheat oven to 400°. Bake fries following package instructions (Bake an extra 5 minutes for crispier fries). Combine 2 tablespoon glaze with 1/4 cup tomatoes (including 1 tablespoon of the oil), and salt. Stir. Toss mixture into arugula; add remaining tomatoes and toss until evenly coated. Top with eggplant fries, cheese, and remaining glaze. Serve.
