1 each, flour tortilla
4 ounces, Chihuahua cheese
3 Eggplant Cutlets, crispy (baked or fried)
2 ounces, additional veggies (e.g. grilled zucchini and squash)
Build the quesadilla by taking the tortilla and filling it with cheese, diced eggplant cutlets, and other veggies. On a hot skillet or flat top at medium heat, cook the quesadilla on both sides for approximately 1 to 2 minutes each. Cut into two or four pieces and serve with desired garnish and sauces if any. We used Salsa Verde.
