INGREDIENTS
Eggplant Tacos:
9 Dominex Eggplant Fries, cooked until crispy
3 small tortillas, warmed
1 avocado, sliced or diced
1 tbsp onion, finely diced
2–3 tbsp Cotija cheese, crumbled
Optional: extra cilantro for garnish
Cilantro Sauce:
1 handful fresh cilantro leaves
1 tsp Dijon mustard
1 clove garlic
1 tsp maple syrup
3–4 tbsp olive oil
Juice of ½ lime
Salt and pepper, to taste
INSTRUCTIONS
Cook the Eggplant Fries
Prepare the eggplant fries according to package directions (bake or air fry) until golden and crispy.
Make the Cilantro Sauce
Add cilantro, Dijon mustard, garlic, maple syrup, olive oil, lime juice, salt, and pepper to a blender or food processor. Blend until smooth and creamy. Set aside.
Warm the Tortillas
Heat tortillas on a skillet or flat top over medium heat until warm and pliable.
Assemble the Tacos
Divide the crispy eggplant fries evenly among the tortillas. Top with diced onion, avocado, and crumbled Cotija cheese.
Finish & Serve
Drizzle generously with cilantro sauce, garnish with extra cilantro if desired, and serve immediately.
