Dominex Eggplant Fry Parmesan Sliders

Turn crispy Dominex Eggplant Fries into cheesy, pull-apart Parmesan sliders! Layered with marinara, mozzarella and Parmesan, then finished with savory garlic-herb butter, these easy sliders are perfect for game day, family gatherings or a fun meatless meal.

Ingredients
1 package Dominex Eggplant Fries
12 Hawaiian-style slider rolls
1 cup marinara sauce, plus more for dipping
1½ cups shredded mozzarella cheese
¼ cup grated Parmesan cheese
2 tablespoons butter, melted
½ teaspoon garlic powder
½ teaspoon Italian seasoning
Fresh basil for garnish, optional
Directions
Cook the Dominex Eggplant Fries according to the package directions until hot and crispy.
Reduce the oven temperature to 375°F. Lightly grease a baking dish large enough to hold the slider rolls.
Without separating the individual rolls, slice the entire package horizontally. Place the bottom half of the rolls in the prepared baking dish.
Arrange the cooked Dominex Eggplant Fries evenly over the rolls. Spoon the marinara sauce over the fries, then sprinkle with the mozzarella and Parmesan cheeses.
Place the top half of the rolls over the filling.
In a small bowl, combine the melted butter, garlic powder and Italian seasoning. Brush the mixture evenly over the tops of the rolls.
Cover the baking dish with foil and bake for 10 minutes. Remove the foil and bake for an additional 5–8 minutes, or until the cheese is melted and the rolls are golden brown.
Garnish with fresh basil, if desired. Slice into individual sliders and serve warm with additional marinara sauce for dipping.
