Sweet meets savory in this vibrant Balsamic Strawberry Eggplant Salad, where crispy Dominex Eggplant Fries pair perfectly with fresh berries and creamy cheese. It’s a light yet satisfying dish that brings bold flavor, texture, and a gourmet twist to your everyday salad.


 


Serves: 2–4


Ingredients:

  • 1 package Dominex Eggplant Fries

  • 4 cups spinach or spring mix

  • 1 cup fresh strawberries, sliced

  • ½ cup goat cheese or feta crumbles

  • ⅓ cup candied pecans


Dressing

  • 2 tablespoons balsamic glaze (or balsamic vinaigrette)

  • 1 tablespoon olive oil (if using glaze)

  • Pinch of salt and pepper


Instructions:

  1. Cook the eggplant fries according to package directions until golden and crispy.

  2. In a large bowl, combine the spinach (or spring mix), strawberries, cheese, and candied pecans.

  3. Drizzle with the dressing and toss lightly to combine.

  4. Top with warm eggplant fries just before serving and enjoy immediately.
