Crispy Dominex Eggplant Fries meet a savory tomato miso sauce in this easy, umami-packed dish. Slightly sweet, a little salty, and finished with a touch of heat, it makes a delicious appetizer, side dish, or meatless meal served with rice or quinoa.

Ingredients
1 box Dominex Eggplant Fries
Sliced green onions or scallions, for garnish
Sesame seeds, optional
Tomato Miso Sauce
1½ tablespoons olive or avocado oil
1 medium onion, finely diced
3 garlic cloves, finely minced
1 tablespoon tomato paste
Pinch of red pepper flakes
⅔ cup water
1 tablespoon light or white miso paste
Instructions
Prepare the Dominex Eggplant Fries according to the package directions until hot and crispy.
While the fries cook, heat the oil in a saucepan over medium heat. Add the onion and sauté for 7–10 minutes, or until soft and translucent.
Add the garlic and cook for 1 minute, stirring frequently.
Stir in the tomato paste, red pepper flakes, and water. Simmer for 8–10 minutes, stirring occasionally, until the sauce has thickened.
Remove the saucepan from the heat. Add the miso paste and whisk until completely dissolved and incorporated.
Arrange the crispy Eggplant Fries on a serving platter. Drizzle with the tomato miso sauce or serve it on the side for dipping.
Garnish with sliced green onions and sesame seeds, if desired. Serve immediately.
