Servings: 4
Prep time: 15 minutes
Cook time: 18–20 minutes
Ingredients
1 package Dominex Eggplant Fries
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon smoked paprika
½ teaspoon ground coriander
½ teaspoon garlic powder
¼ teaspoon turmeric
¼ teaspoon ground cinnamon
4 warm pita breads
2 cups shredded lettuce
1 cup diced tomatoes
1 cup diced cucumbers
½ cup pickled red onions
Garlic Yogurt Sauce
1 cup plain Greek yogurt
1 garlic clove, minced
1 tablespoon lemon juice
1 tablespoon olive oil
Salt and black pepper to taste
Directions
Preheat the oven to 400°F.
Arrange the Dominex Eggplant Fries in a single layer on a baking sheet. Lightly drizzle or brush them with olive oil.
Combine the cumin, smoked paprika, coriander, garlic powder, turmeric, and cinnamon. Sprinkle the shawarma seasoning evenly over the eggplant fries.
Bake for 18–20 minutes, turning halfway through, until the fries are hot, crispy, and golden brown.
While the eggplant fries bake, combine the Greek yogurt, garlic, lemon juice, olive oil, salt, and pepper in a small bowl.
Warm the pita breads and fill each one with shredded lettuce, tomatoes, cucumbers, pickled onions, and seasoned Dominex Eggplant Fries.
Drizzle generously with garlic yogurt sauce and serve immediately.
Serving idea: Add crumbled feta, fresh parsley, or a dash of hot sauce for even more street-food flavor.
