Dominex Eggplant Meatball Sliders
These Dominex Eggplant Sliders are a touchdown when it comes to great taste and healthy recipes. Made with our Dominex Eggplant Meatballs, which have 1/3rd the calories of beef meatballs, these sliders will become a favorite.
3 Bags of Dominex Eggplant Meatballs
2 Red Peppers
1 Bottle of Italian Dressing
1 Bag of Spinach
1 Jar of Pesto
1 Bag of Hawaiian Rolls
1 package of Mozzarella Cheese Slices
1 Jar of Sun Dried Tomatoes in Oil
Preheat oven to 350° F. Bake Dominex Eggplant Meatballs for 18 minutes on a cookie sheet.
Dice peppers and onion. Marinade for a few minutes in Italian dressing. Cook veggies in Italian dressing marinade for 5 minutes. Add spinach and cook until wilted or until vegetables are soft. Cut Hawaiian Rolls in half. Spread pesto on the bottom layer. Layer Meatballs, Mozzarella cheese, sundried tomatoes, and cooked veggies. Place the tops of the rolls on the sliders and bake for 5-10 minutes until cheese is melted.
